Ingredients
1/2 head of Chinese cabbage (also known as Napa cabbage), thinly sliced
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1/2 red onion, thinly sliced
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint (optional)
1/4 cup sliced black olives (optional)
1 avocado, diced (optional)
1/4 cup toasted sunflower seeds or chopped nuts (optional)
Dressing
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice (or white wine vinegar)
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon honey or maple syrup
Salt and black pepper, to taste
Preparing the Salad
Prepare the Vegetables: In a large bowl, combine the thinly sliced Chinese cabbage, halved cherry tomatoes, diced cucumber, diced red bell pepper, and thinly sliced red onion.
Add Feta and Herbs: Add the crumbled feta cheese, chopped parsley, and chopped mint (if using) to the bowl.
