Quick and Easy Cheesy Potato Bake

Ingredients
4-5 medium potatoes, thinly sliced (about 1/8-inch thick)
1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)
1 cup heavy cream (or half-and-half)
1/2 cup sour cream
2 cloves garlic, minced
1/2 teaspoon onion powder
Salt and pepper to taste
2 tablespoons butter, cut into small pieces
1/4 cup grated Parmesan cheese (optional, for topping)
Fresh parsley or chives, chopped (optional, for garnish)
Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a similar-sized casserole dish.
Prepare the Potatoes: Peel and thinly slice the potatoes. It’s important to slice them evenly so they cook at the same rate. You can use a mandoline slicer for uniform slices.
Make the Creamy Cheese Sauce:
In a mixing bowl, combine the heavy cream, sour cream, minced garlic, onion powder, salt, and pepper. Stir until well combined.
Add 1 cup of the shredded cheddar cheese to the mixture and stir until the cheese is evenly distributed.
Assemble the Dish:
Arrange a layer of sliced potatoes on the bottom of the prepared baking dish.
Pour about 1/3 of the cream mixture over the potatoes.
Repeat the layers, ending with a layer of the cream mixture on top.
Add Butter and Parmesan:
Dot the top of the dish with small pieces of butter.
If using, sprinkle the grated Parmesan cheese over the top for extra flavor and a crispy topping.
Bake:
Cover the dish with aluminum foil and bake in the preheated oven for 35-40 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
Serve:
Remove the dish from the oven and let it sit for a few minutes to set. Garnish with chopped fresh parsley or chives if desired.
