Ingredients:
– 1 cup water
– 2 tablespoons fresh ginger, peeled and grated
– 1/4 cup honey
– 2 tablespoons gelatin powder
– Optional: 1/2 teaspoon vanilla extract

Instructions:

1. In a small saucepan, combine the water and grated fresh ginger. Heat the mixture over medium heat, stirring occasionally, until it comes to a simmer.

2. Reduce the heat to low and let the ginger steep in the water for about 10 minutes to infuse its flavor.

3. Strain the ginger-infused water through a fine mesh sieve or cheesecloth into a clean bowl, discarding the grated ginger.

4. Return the infused water to the saucepan. Add the honey and heat gently over low heat, stirring until the honey is fully dissolved.

5. Gradually sprinkle the gelatin powder over the liquid, whisking constantly to prevent lumps. Continue whisking until the gelatin is fully dissolved and the mixture is smooth.

6. If using, stir in the vanilla extract.

7. Remove the saucepan from the heat and let the mixture cool slightly.

8. Using a dropper or spoon, carefully fill the silicone gummy bear molds with the ginger-honey mixture.

9. Refrigerate the molds for at least 2 hours, or until the gummy bears are firm and set.

10. Once set, remove the gummy bears from the molds and store them in an airtight container in the refrigerator for up to 2 weeks.
