Ingredients :
– 2 cups of chickpeas, already cooked and drained
– 300 g of fresh spinach
– 1 onion, finely chopped
– 3 cloves of chopped garlic
– 1 morron pepper cut into strips
– 1 teaspoon of ground cumin
– 1 teaspoon of sweet paprika
– 1/2 teaspoon of turmeric
– Salt and pepper to taste
– Juice of 1 lemon
– Chopped fresh coriander to decorate
– Olive oil
Instructions :
1. Heat the olive oil in a large skillet or wok over medium-high heat.
2. Add chopped onion and sauté for 2-3 minutes until transparent.
3. Add the chopped garlic and pepper. Cook for 2 more minutes.
4. Incorporate the chickpeas and spices (cumin, paprika and turmeric). Mix well and cook for 5 minutes, stirring occasionally.
5. Add the spinach and cook for about 2-3 minutes.
6. Season with salt and pepper to taste.
7. Add the lemon juice and mix well.
8. Remove from heat and sprinkle with chopped fresh cilantro
9. Serve hot and enjoy a great taste
