Ingredients:

1 cup all-purpose flour
2 large eggs
1 cup milk
1/4 cup water
2 tablespoons unsalted butter, melted
1 tablespoon granulated sugar (optional)
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)
Butter or oil, for greasing the pan
Instructions:

Prepare Batter: In a large mixing bowl, whisk together the flour, eggs, milk, water, melted butter, sugar (if using), salt, and vanilla extract (if using) until smooth and well combined. Let the batter rest for 10-15 minutes.
Heat Skillet: Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the skillet with butter or oil.
Cook Crepes: Pour about 1/4 cup of the batter into the center of the skillet. Quickly tilt and rotate the skillet to spread the batter evenly into a thin, round crepe.
Cook Until Set: Cook the crepe for 1-2 minutes, or until the edges begin to lightly brown and the surface appears set.
Flip and Cook Other Side: Carefully loosen the edges of the crepe with a spatula, then flip it over using your fingers or the spatula. Cook for an additional 1-2 minutes on the other side, until lightly golden brown.
Repeat: Transfer the cooked crepe to a plate and cover with a clean kitchen towel to keep warm. Repeat the process with the remaining batter, greasing the skillet as needed.
Serve: Serve the crepes warm with your favorite toppings, such as Nutella, fresh fruit, whipped cream, jam, or powdered sugar. Roll or fold the crepes as desired and enjoy!
